1 | Approximately 6 cloves of garlic, mashed / 6 tsp garlic puree. |
2 | About 3 tbsp of balsamic vinegar. |
3 | About 1.5 tbsp of Dijon mustard. |
4 | Approximately 1 tbsp of olive oil. |
5 | About 2 tsp of dried thyme. |
6 | Prepare 3/4 tsp of low sodium salt. |
7 | Take 1/2 tsp of black pepper. |
8 | You need 1 kg of (2 – 2.5lbs) boneless rolled loin. |

Step 1 | Mix the marinade ingredients together and let meld while you pat the dry. |
Step 2 | Rub the marinade all over the joint, cover and refrigerate for at least 4 hours but preferably overnight. |
Step 3 | Preheat the oven to gas 4 / 180C / 350F and roast the for 90 minutes, (35 minutes per pound plus 20 minutes) basting twice during roasting. |
Step 4 | Let the rest for at least 10 minutes before removing the butcher string & fat and slicing. |
Step 5 | Delicious served with garlic mashed potatoes (see my previously posted recipe) and seasonal vegetables or rice / cous cous / polenta. |
