Ingredients of Roast Chicken with Potatoes
1 | Approximately 1 of whole chicken cut in approximately 12 pieces. |
2 | About 3 of large potatoes washed and cut in cubes. |
3 | Approximately 6-8 of artichoke hearts. |
4 | It’s 5 sprigs of green onions chopped. |
5 | You need of Few sprigs chives chopped. |
6 | About of Juice of 3 limes or 2 lemons. |
7 | About 1 tsp of chilli powder. |
8 | About 2 tsp of pepper powder. |
9 | About 2 tsp of oregano. |
10 | Approximately 1 bunch of fresh dill chopped. |
11 | Take of Olive oil. |
12 | It’s to taste of Salt. |
Roast Chicken with Potatoes cooking step by step
Step 1 | In a cup mix lemon juice, oregano, chilli, pepper powder, salt and set aside. |
Step 2 | In a skillet heat a tbsp olive oil and add chopped chives and onions and cook until wilted about 5-8 minutes, set aside. |
Step 3 | In a large bowl place chicken pieces at the bottom, layer potatoes above chicken pieces, layer artichokes, now add chive and onion mix. |
Step 4 | Pour the marinade into the bowl, mix together throughly and set aside for 1/2hr. |
Step 5 | Set oven to moderate /180 degrees celsius. |
Step 6 | In a baking tray, place potatoes at the bottom of the tray place chicken on top, pour in the marinade on the chicken pieces, drizzle 1/2 cup of olive oil and bake for 50 minutes. |
Step 7 | Remove chicken pictures and keep warm and bake potatoes for about 40 minutes or until crusty. |
Step 8 | Mix chicken pieces, cover and set aside for 8 minutes before serving. |
Step 9 | Enjoy with a side of salad.. |
